Ri-Top Red FW 100 is an all-rounder based on plant extracts. The product is mainly used to improve the taste of meat products such as ham or bacon. Because of the polyphenols it contains, however, Ri-Top Red FW 100 can do a lot more!
Polyphenols inhibit bacterial growth and also have an antioxidant effect. This preserves the natural colour of the meat. Fresh colour and taste without pickling salts. In combination with amines which occur naturally in meat, nitrite forms carcinogenic substances called nitrosamines. By refraining from adding nitrite, you are contributing to reducing harmful substances in food. Pretty smart, right?
