Ri-Fresh is a fermented and dried onion extract. The fermented onion extract rounds off the flavour of meat products and preparations with a mild, spicy taste and helps to keep them fresh.
Fermentation produces organic acids and antimicrobial substances.
The action mechanism is based on two effects:
1. Reducing the metabolic activity of bacteria
2. Reducing the water activity (aw value)
Both of these effects inhibit bacterial growth. Your product stays fresher for longer, even at a neutral pH.
There is no legally prescribed designation for Ri-Fresh. In the list of ingredients, Ri-Fresh can be referred to as “onion extract”, “natural onion flavouring”, “flavouring extract” or “spice extract”.
